TV 7 days and the Guide of routard
“In Carnac, Pierre Michaud transformed the old family house to make it the best table of the region. Thus taste the rare subtlety of what you have in your plate, this telescoping of savours and colors which will make you travel, two hours during. An entry ground-sea which gives the tone, to put to you in appetite: a pot of foie gras to the pepper of China, with calf sweetbread and with sardines, and like dish, the net of sea-bream to the rillette of ginger, wafer of buckwheat to red onion, chorizo and omates. Surprising and dazzling in mouth. The menus change every three months. Very pleasant reception and service. ”
The Point: August 2002
“Pierre Michaud, who worked with the Press of Saint-Avé and in the Ibarboure brothers, in Bidart, made its discrete inn, near to the aligned rocks of Kermario, the beautiful table not expensive and delicious of the surroundings of Quiberon. One comes there for the charm from an old farm arranged with a modern preoccupation with a comfort and the enlightened oenological councils from nice Laetitia. It is especially a question of taking its eases to taste with the last lucky finds of the moment. The pot of foie gras to figs, the celery branch bubble to the ravioles of mackerel to mustard and onions, the sea-bream on its wafer of potatoes with its compote of onions cooked with buckwheat beer and the black hake used on andouille mashed potaties with its fondue of shallots for the red wine and its sauce for the morello cherry are mets full with ideas and mischievousness. The filled pancakes with the cooked orange butter Suzette way and its sorbet with bitter orange indicate that sweetened is not neglected here. The menus are at price gifts. ” |
